I am bilding a NAS with RPI 5 16 GB an four 3.5" hard drives. I have a 12v 10amp good quality power supply. Is it OK to use a power supply rated at 10amps?

It’s ok unless idle power consumption is ok for You.
All power supplies have some efficiency, usually bigger ones are designed for more workload and they are not as efficient as those where not that much power is needed. Yet another factor is size, they need to be larger and that is not always needed.

Check specs for Your drive, it should have info about power consumption on idle and high load,
add 20w for board, bit more if You have extra components (usb, peripherals)
I usually just connect my power meter and watchinging trying some stuff to get real usage data.
