In the Getting Started section, it is advised to access the Rock Pi S initially through the USB to TTL cable. Is there any other way to ssh into the system (i.e. Ethernet/Wifi [DHCP] or USB-C) the first time?

Yes, Ethernet is also fine. You can just use ssh.
