Display cuts out, not sure if it is a video driver issue or something else. Have used multiple monitors and tried different versions of armbian , debian, ubuntu server, all having the same issue where the display goes black and system goes unresponsive.

This sounds like how mine was when I had too many peripherals plugged into it.
This sounds to me like it’s actually underpowered. Try it without WiFi/NVME/EMMC and just try a standard SD card. Also make sure your power supply matches those on the hardware page.
I reformatted a sd card and wrote the Armbian image with Ubuntu gnome, it’s working well, I just really didn’t like gnome and didn’t give it a chance. The other desktop environments are a bit wonky and will probably get to be more stable over time.
Since then have migrated to the latest release of Debian from Radxa’s website. Everything is working well and have tested several desktop environments, Openstep, XFCE, Cinnamon running with no issues.
