is there any information/data sheet around, what the maximum screen resolution of the Rock Pi (and its internal iGPU from Intel Atom CPU) is via HDMI? Does it support ultrawide 21:9 with 3440 x 1440 as well?

No idea about that resolution. It can do up to 4k. But is almost unusable at 4K.
This isn’t a powerful SoC. It is 5 years old. Don’t expect miracles of it.
1080p is the resolution that works best.
I am aware of that.
I need a device to try to connect to Citrix for homeoffice. And for now I don’t have a laptop available. I only got my ultrawide monitor here. I’ve already tried it with an older Zbox nano (mini cube-like PC), but its Celeron from 2014 is unable to even display that resolution, since it is using an older HDMI standard. So that’s why I asked for my specific resolution.
Mine works at 3840 x 1080 with no problems.
