Boot screen never comes up and greeter displays two screens. Can I disable DSI-1 and only use HDMI

Because DSI is not hotplug, so it is written in device tree. You can edit and recompile the device tree to disable it completely.

Or disable it in X, try

xrandr --output DSI-1 --off

We plan to move DSI to device tree overlay to make it easier to enable/disable.
